A family and friends’ recipe with West Texas roots.
2 cups sugar
1 cup buttermilk
2 cups flour
1 pinch salt
2 teaspoons baking soda
1 cup vegetable oil
2 eggs
1/2 cup cocoa
1 cup boiling water
Frosting:
1 box powdered sugar
1 stick butter, softened
1 8-ounce package cream cheese, softened
1 teaspoon vanilla
1/4 cup cocoa
Nuts if desired
Preheat oven to 350 degrees. Mix dry ingredients together. Add buttermilk, vegetable oil, eggs and mix thoroughly. Add boiling water and mix (make sure water is boiling hot!). Cook for 35-45 minutes in a generously greased and floured 9x12-inch pan. Allow cake to cool prior to frosting.
Frosting:
Combine and whip until mixed and creamy. Add 2 tablespoons buttermilk, plus a bit more as needed until perfect. Spread on cake. Add nuts if desired. If a more simple frosting is desired, simply sprinkle with powdered sugar.
